I can hardly contain my excitement as I write this post for you!! NO, I’m not pregnant. 🙂 Three weeks ago, I was sitting at my dining room table typing up a blog-post and daydreaming about where I wanted this little blog to be in a few years. I dream big, but there’s always… Read more »

These chocolate chip cookies are the real-deal; I crafted them to taste as good, if not better, than their gluten filled cousins.  We keep a staple of these in our freezer at all times as the kids LOVE to snack on them as a special treat. This recipe can be found on page 258 of… Read more »

For my son’s 2nd birthday party last weekend, I wanted to create two different cupcakes. One for the chocolate lovers, and one using one of his favorite fruits – Strawberries. Even though I knew he probably wouldn’t eat one (he’s not into desserts oddly!), I couldn’t throw a birthday party without cupcakes. He cried when… Read more »

If you’ve never tried pitting or peeling a mango, take my word that it is a slimy, slippery and messy process. Unless, of course, you know a few tricks. You’ll find a plethora of methods for cutting a mango, but after trying them all, I find this method on how to peel a mango one… Read more »

My little man turned two on Saturday and we threw him a pool party at our neighborhood clubhouse. We’ve been in a heat wave here, and because we were transporting the food from our house down the street, I wanted the menu to be easy and not require lots of oven time. I also wanted… Read more »

*Note: I have recently learned that letting ground meat marinate in fresh pineapple juice too long completely breaks down the connective tissues, leaving you with mush. Make sure to only marinate these patties for the time listed if using fresh juice. Canned juice should not have the same effect. These Hawaiian Turkey Burgers are my… Read more »

I recently had the pleasure of providing food for a magazine photo shoot. It so fun getting to play chef and food stylist at the same time. The shoot was designed and furnished by PJ Rude of MilkGlass Rentals , and photographed by Jennifer Skog Photography, a very talented lifestyle and wedding photographer (she also did my homepage/bio photos). PJ is… Read more »

Did you know the Nutri-Grain Bar slogan is “Take Care of You”? I guess Kellogs didn’t get the memo that soy, corn syrup, corn starch, and “enriched” flours are really hindering your well-being rather than “taking care of you.”  This recipe for my Nutritious ‘Cereal’ Bars will make you feel good about what you are… Read more »

It was over 104 degrees here today, so we opted for grilling instead of doing anything in the kitchen. I marinated chicken breasts and legs with olive oil and a 1/4 cup of my Pesto Sauce, and threw this lemon and parsley marinated zucchini on the grill once the chicken was done. The lemon and parsley… Read more »

If you’re grain or gluten-free, you will no longer miss pizza once you make this gluten free meat lovers pizza and its crust. I choose to use three different flours for this crust to give it the complexity that regular crusts have, and to avoid the sweet flavor that most almond or coconut crusts have…. Read more »

My best friend from high school is getting married today! My husband and I were the first to get married out of our friends (5 year anniversary in a few weeks!) so we’ve been waiting patiently for all of them to catch up and join us in this crazy married life. And then onto the… Read more »

There’s plenty of silly names for zucchini noodles: zoodles, zusketti, zuttuccine. Strangely, we call zucchini “zukes” (and and cucumbers “cukes”) around this house. Because the original is just too long to say right? Call them what you wish, but Zucchini noodles are kind of like the new spaghetti squash. Or at least they are during… Read more »

This vegetable curry only takes 15 minutes to prepare and is packed full of anti-inflammatory spices! It’s also night-shade free and the first thing I’ll be making when we start our 30-day cleanse! When my son first started eating solid food, he would eat everything we put him in front of him. In the past… Read more »

Tomato season is upon us! We took our weekly visit to our small local Farmer’s market and the aisles looked like a sea of red, speckled with yellows and oranges from the gorgeous heirlooms that are currently in their prime. Heirloom tomato season, in particular, is my favorite time of the year. The unusual… Read more »
