This week has been so much fun! We went apple picking because Asher has been asking for so long and it's memories like that that just need to be made! It feels as if every week that goes by, I realize how quickly time passes. In this week's digest, I'm showing you a few of my meals from the week, giving tips on how to prep in advance, and how to feed that insatiable hunger that comes with breastfeeding!
I bought these hoping they'd be fun treats to put in Asher's lunches, but of course my picky kid would say no to deliciously crunchy fruit clusters and chocolate covered dried bananas. He'd rather have seaweed! Guess I'll just have to eat them. I count this as a huge score for mom!




Driving over an hour to see the joy on his face this weekend was totally worth it! He's been asking to go apple picking forever. I love that he loves to learn where food comes from and wants to have his own garden at our house. My boy inspires and encourages me to keep doing what I'm doing every day!
I wasn't feeling great from a cold and everyone was out for dinner, so I took to the freezer to find a dinner that wouldn't take long to thaw/reheat. Thankfully I had a few of these Grain-Free Corn Dogs (or corn puppies… Ratatouille anyone?) left from testing and photographing! There's instructions in the recipe for freezing and reheating!
This is what's in my diaper bag! I seriously don't go anywhere without these essentials!
I've been so starving in the morning lately with nursing through the night and then working out in the morning and I can't seem to get enough food! During the rest of the day I'm fine. So I added my wraps from Meals Made Simple in the morning to help fill me up. I already had one with strawberry jam and now this 3-egg breakfast wrap with bacon and a cup of decaf coffee. I'm in need of making some of the freezer breakfast burritos from the book to make breakfast even easier!

Just beautiful, Danielle… beautiful. Thank you for sharing parts of your life with us. I read, in “Botany of Desire – A Plant’s Eye-View of the World,” about an apple orchard located at the New York State Agricultural Experiment Station at Geneva, NY. It’s a little known public resource & the largest apple collection in the world. Did you know there are purple & near-blue apples, & some that weigh 1 lb. each?! I HAVE to see these wonders with my own eyes… just have to! Going there is on my “pretty please / want” list. Learning how to graft would be a fascinating & useful tool in one’s gardening arsenal as well. <3

Danielle, I was wondering about chocolate? I have cocoa nibs and would love to make something with them, any ideas? I would be making this for other family since SCD says illegal! Have you found you can tolerate it? I am a newbie to SCD diet and won’t be trying illegal stuff any time soon but I would like to know for the future.

I found that I could tolerate it after awhile! You could substitute cocoa nibs in for anything that calls for chocolate chips. You could try my Real Deal Chocolate Chip Cookies!
